
The cellar
The construction of the modern cellar, which rises next to the eighteenth-century Palmento to expand production, followed strict protocols of bioarchitecture.
Partly buried under the hill, the structure perfectly blends with the landscape, making use of natural lighting and ventilation. Cone-shaped openings on the ceiling allow the light to reach the rooms underground, notably reducing the energy required for artificial lighting. An underground tunnel system makes use of the strong ventilation available to regulate the temperature, allowing to save more than 65% of energy during summer.
Only traditional materials have been used during construction. Wood, iron, glass and lava stone blend with the ancient setting of the Palmento, drawing a continuous string between the past and present that brings out the beauty – and sustainability – of the entire structure.

Vinifying excellence
Palmento Costanzo aims to understand and enhance the extraordinary heritage of Mt. Etna, knowing that only the diverse nature of its hills and the unique Contradas can truly embody the magnificent picture of a lively territory in constant evolution. This is how the idea of «vinifying diversity» came to be: a concept based on careful vineyard zoning, long years of experimentation, micro-vinification and continuous tasting. This philosophy penetrates all aspects of production to promote varietal purity, fruit integrity and the dazzling territory.
All operations, from grape pressing to wine bottling, make use of the force of gravity, respecting the ancient Palmento’s multi-level structure. Yeasts increase thanks to selection in the vineyard: a proof of the vigorous energy present among the rows, including the microflora.


Focus
Ovum full expression and elegance
The three parcels of Contrada Santo Spirito age in egg-shaped French oak barrels. Created by the historic Tonnellerie Taransaud, Ovum barrels make use of the liquid’s convective motion to facilitate the natural bâtonnage of wine and lees. The choice was made with regard to integrity and the natural evolution of the wine, aiming to bring out the natural expressiveness of each parcel.
